WThis is a home-style version of a beverage featured on our latest cocktail list. It's a party-sized pre-mixed which is bursting with the essence of a holiday season, which makes it perfect for hosting a festive gathering. Any leftover syrup to use in morning drinks, desserts, or to make more rounds of this cocktail.

The Bikini Cocktail

Yields 10 people

For the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Premix (produces 850ml, enough for 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Instructions

Making the Cordial: Place every items inside a pan, heat until it reaches a gentle boil, stirring to dissolve. Next, take off the heat and leave to cool entirely. Decant into a clean bottle, cap it and refrigerate it chilled, where it will keep for about one month.

To make Batch Mix: Mix all the liquids into a large bottle, leave to sit for an hour, then filter it preferably using cheesecloth, so it's completely strained.

When ready to serve: Pour 85ml of the premix into a stirring glass filled with ice, gently stirring lightly for a minute to cool it down. Pour to a chilled martini glass or equivalent, decorate with a few cranberries and complete it with a light spray of mandarin oil above the glass.
